Just because you’ve decided to cut out the carbs, doesn’t mean you have to cut out the bread completely! Try this super simple microwave Paleo bread and you’ll see just how easy it can be to live healthier
There are a multitude of recipes out there for this awesome paleo bread. There are may recipes that call for almond flour but I substituted the almond flour for coconut flour (have you seen the price of almond flour!?! It’s insane!), and also added some flax meal for an extra boost.
It is so quick and so easy and so lovely and so, just do it already! Here’s the recipe so you have no excuses.
Recipe for Miracle Microwave Paleo Bread
Yield: 3-4 slices
Prep time: 1-2 minutes
Cooking time: 2-3 minutes
What you need
⅓ cup coconut flour
1 tablespoon flax meal
½ teaspoon bicarbonate of soda
⅛ teaspoon salt
1 egg, whisked
2 and ½ tablespoons olive oil
What you need to do
1. Grease a mug.
2. Place all ingredients into hand mixer container. (You can just mix together with a fork as per original recipe.)
3. Pour mixture into mug.
4. Microwave for 2-3minutes.
5. If you have patience, you can wait until it cools a bit – but I’m hungry and I need to eat this bread so I just pop it out, slice, and eat!
