Halfway!!!! Whooooooo-hooooo! This feels amazing. I even did a HIIT workout today – for 45 minutes – and I’ve lived to tell the tale!
Kept this very simple – scrambled eggs, avo, and sautéed mushrooms and onions. My new favourite thing is Red Espresso so I made myself a Red Anericano for breakfast.
Oh yes, simple again! Butternut soup (leftovers) with chops chutney (more leftovers).
We celebrated me making it to the halfway mark with this plain and simple, yet oh so amazing, meal.
Fillet of beef, with a fresh guacamole (this was better than I expected), spinach, pumpkin, and zucchini fritters. What an awesome meal, least of all because the entire family tucked in and loved it all. Getting the kids to eat zucchini/baby marrow/courgette is a task usually so I was thrilled that they enjoyed them as fritters!
