Super quick, delicious, and nutritious paleo pancakes
This is pure delight! Just looking at it makes me smile 🙂
What a great alternative if you’re not keen on the usual banana flapjacks!
Begin by mixing the eggs and nut butter together, then combine the rest of the ingredients, and fry. They’re quick. They’re delicious. They’re just perfection!
Recipe for Paleo Nut Butter Pancakes
Yield: 2-3 pancakes
Prep time/cooking time: less than 10 minutes
What you need
2 tspns nut butter
1 tblspn coconut flour
1 tblspn tapioca flour
vanilla extract to taste
What you need to do
1. Mix eggs and nut butter together.
2. Add flours, and vanilla, and mix well.
3. Scoop batter onto hot pan and fry in a little olive oil/butter, on both sides, until perfectly browned.
As easy as that, and it’s done!
Note: The coconut cream and crunch of the roasted almonds works really well, but you can top with whatever you fancy. I can’t tell you how good this is!
