Paleo cottage pie

Comfort food is absolutely just that – comforting. On these wintry nights I sometimes find myself craving something starchy, sugary, carborific, and generally just no good at all. Enter paleo cottage pie. 

It’s quick (ish) and not at all fussy or complicated. 

 What you need 

For the mince: 

1 onion, chopped

2 cloves garlic, chopped

2 carrots, chopped 

Handful of mushrooms, chopped 

(I use a food processor and just bang the lot in and it’s done in about 3 seconds)

1kg mince 

Salt and pepper

Dried origanum (you can use other herbs)

1/2 cup Tomato passata 

What you need to do

1. Fry the veggies until softened. 

2. Add mince. Brown.

3. Add spices and cook for about a minute or two. 

4. Add tomato. Cook for about 20 minutes. 

Sweet potato mash

For the sweet potato topping: just boil/steam 3 medium sweet potatoes, remove from heat and mash.  You can add a bit of ghee if you’d like. 

Layer mince and potato. Sprinkle nutritional yeast flakes (if using) – put in the oven until it’s all browned, usually 30 minutes or so. Enjoy!
