In my continuing quest to find the best bread recipe to curb the cravings for a sandwich or burger that inevitably hits every now and then, I came across this recipe for Ultimate Keto Buns. Oh my hat, ultimate they sure are! They’re banting friendly, and paleo friendly (just leave out the optional sweetner).
The recipe looks a bit complicated (just because there’s a lot of explaining done in between!) but it’s pretty simple actually. I used a food processor (with the blade attachment) and everything just went in there. Dry ingredients first, then wet, and then it was done.
What you need
Ingredients (makes 10 buns):
1 ½ cup almond flour (almond meal) (150g / 5.3 oz)
⅔ cup psyllium husks – will be powdered, or ⅓ cup psyllium husk powder (40g / 1.4 oz)
½ cup coconut flour (60g / 2.1 oz)
½ cup flaxmeal (75g / 2.6 oz) – or use more almond flour instead
2 tsp garlic powder
2 tsp onion powder
2 tsp cream of tartar
1 tsp baking soda
1 tsp salt (pink Himalayan or sea salt)
5 tbsp sesame seeds (or sunflower, flax, poppy seeds) or 1-2 tbsp caraway seeds
Optional: 2 tbsp Erythritol (20g / 0.7 oz)
6 large egg whites
2 large eggs
2 cups water (boiling)
What you need to do
1. Preheat oven to 175°C. Mix the dry ingredients (except sesame seeds).
2. Add wet ingredients, eggs first. Mix well. Add boiling water and combine thoroughly.
3. Form buns or put into your loaf tin.
4. Top with sesame seeds. Bake for around 45 minutes.
