Paleo meatball ‘pasta’ sauce 

I don’t have step by step pics of this process because it was a quick and easy (and decidedly late!) dinner and I didn’t have a chance to get pics. It’s pretty simple to follow though so shouldn’t cause too many problems! 

What you need

For the meatballs: 

500g mince 

1/2 onion, chopped finely

Handful of parsley/dill/fresh herbs of your choice 

1 green chilli, chopped finely (optional) 

1 egg

What you need to do

1. Mix all the ingredients together until well combined. Form into bite sized meatballs. Fry in a little coconut/oil until browned evenly. 

What you need

For the sauce:

1/2 onion, chopped 

1 tspn chopped garlic

1/2 bottle of tomato passata (1 cup)

1 tspn dried origanum 

Salt & pepper to taste 

What you need to do

1. Fry the onion in coconut/olive oil until translucent. 

2. Add garlic and fry for a minute or so. 

3. Add tomato purée/passata and seasoning, reduce heat to low, cover and simmer for about 15-20 minutes. 

4. You can then add the fried meatballs to the sauce, coat them well in the sauce and simmer uncovered for about 5 minutes. 

  
Done! Serve with zoodles, over wilted spinach, with cauli rice … Whatever you fancy! Sprinkle with nutritional yeast for some cheesiness. Yum!
