Paleo Coconut Crumbed Chicken [Paleo, Gluten free, Grain fre, Dairy free, Family Friendly]

Crumbed chicken. Paleo. Gluten free, grain free, and DELICIOUS! Enough said.

There’s something highly satisfying about crumbed chicken. Why we want to complicate matters by making up ‘secret recipes’ and coating chicken is a bit of a puzzle but hey, it’s clearly something we all love or else, er-hem, we would t be licking our fingers because it’s so good. Right!!?

Now just because you e decided to eat healthily or for other reasons, doesn’t mean you can’t eat some good ol’ fashioned crumbed chicken. Coconut flour and some spices form the basis of this recipe nao it’s also nut free. Bonus!

Recipe for Paleo Coconut Crumbed Chicken

What you need

12 chicken pieces (you can use however much you want, as well as your choice of skin on/bone in etc)

2 eggs, whisked

1/2 cup coconut flour

Salt & pepper to taste

Cayenne pepper (optional)

Olive oil

Sesame seeds (to sprinkle over)

What you need to do

1. Preheat oven to 200°C.

2. Get two shallow plates (pasta bowls work well). Add the eggs to one, and the coconut flour and seasoning to the other.

3. Dip chicken into egg first. Coat well.

4. Now coat chicken in coconut flour mixture.

5. Once you’ve done all the pieces and placed in your oven dish, drizzle with olive oil.

6. Sprinkle sesame seeds over.

7. Bake for about an hour, or until chicken is cooked through.

Serve with sweet potato chips, mushroom cashew gravy, and a salad. Actually, serve it any way you choose!! Like I said before, it’s CRUMBED CHICKEN!
