Paleo pumpkin pizza crust [Gluten free, Grain free, Dairy free]

Super quick and simple alternative paleo pizza crust – sit down, Cauli… Pumpkin, suit up!

I’ve tried the cauli crust and really enjoyed it, but decided to give a pumpkin crust a go. I am so glad I did! This is far easier and quicker than the cauli base – no mucking about with squeezing and draining and burning your fingers in the process! 

 

Recipe for Paleo Pumpkin Pizza Crust

Yield: 1 large pizza base 

Prep time: 20 minutes (incl. resting time)

Cooking time: 20-30 minutes

What you need

2 cups pumpkin, mashed 

2 eggs, whisked 

3 tblspn coconut flour

1 tblspn tapioca flour

4 tblspn psyllium husk  

Salt and pepper to taste 

*Nutritional yeast (optional)

What you need to do

1. Preheat oven to 210Ā°C. 

2. Once you’ve steamed your pumpkin, mash it up (no lumps!).  Add eggs and mix well. 


3. Combine the dry ingredients. 

  

4. Add dry ingredients to pumpkin mixture.  

 
4. Mix well until thoroughly combined.  

 
5. Allow the ‘dough’ to rest for 10 minutes to allow the psyllium husk to do its thing. 

6. Spread over baking tray (I used a pizza tray covered with a silicone mat). *If you’re using nutritional yeast, sprinkle some over the base now.

  
7. Bake for about 20-30 minutes, or until edges are browned. 

 
8. Remove from oven, add toppings of your choice, stick it back into the oven until toppings are cooked to your satisfaction, remove and enjoy!! (Ok, wait for it to cool down a bit first… Then enjoy!
