Firstly, my grandmother is the best maker of Indian atchars and pickles and all sorts. Truly. That’s not my biased opinion, people love her stuff! One of my favourite things to eat growing up was nuts chutney on buttered bread …. Shoooooo weeeee! I’m salivating at the thought! We can see the problem straight away – the chutney is made with peanuts, so that’s problem #1. Then the bread and butter are clearly issues … So I thought to the hell with it, I want some nuts chutney, and I’m going to make some, just a paleo friendly version. I only had cashew nuts so naturally, I used those. I reckon almonds would work well too.
It’s really rather simple, just a matter of blending everything together. I made a small amount because it’s not something I could eat all day (who am I kidding! It’s exactly something I could eat all day therefore I had to make a small quantity!).
What you need
1/4 cup mint, closely packed
2 green chillies (or more, but this gave just the right amount of heat)
1 level tspn chilli powder
1/2 tspn salt (might need more, depends on your taste)
Juice of 1/2 a lemon
2 tblspns olive oil
What you need to do
1. Add everything into your blender. Chop the chillies up roughly beforehand, but other than that, you can just throw everything else in.
2. Blend until the majority of the chunks of nuts are smooth, but don’t turn it into a nut butter! I like a bit of crunch too.
3. Taste – add more salt/lemon if needed.
You can have a teaspoon of it on the side with a curry, or spread lightly on a cauli wrap … Mmmmm yummmmmy! Ooh, on some paleo bread… Or with some fish … Yeah, with anything if it were me! So glad I tried – it turned out great, not exactly the same obviously, but a damn near match!
