Paleo Sweet Potato Hash Brown 

I love hash browns and making a paleo version makes my life just a tad better, after all, it’s the little things that count, right?! 

It’s pretty quick too which is always what I’m after! I served these with bacon, avo, and chilli-naise, but that’s entirely up to you. 


What you need

1 cup sweet potato, grated 

1-2 eggs (size dependent) 

1 tblspn coconut flour 

1 tblspn psyllium husk (optional, but good for binding properly) 

Salt and pepper to taste 

(You could add some dried herbs for extra flavour too, or cinnamon for something sweeter) 

What you need to do

1. Grate your sweet potato. 


2. Add all your ingredients. Mix well. Leave for 5-10 minutes to ‘rest’ (especially if using psyllium husk). 


3. Form into palm-sized hash browns. 


5. Fry in coconut/olive oil. (I had fried bacon prior and so used the fat from that to fry these … Yum!). Done!
