Sweet potato ‘vanilla chai’ pancakes ( NO flours!)

I wish I had one of those ‘scratch and sniff’ features here because these smell ammmmaaaaaaaaaziiing!!! Not just the aroma of the chai masala and vanilla mingling with the senses, but frying them in ghee adds a butteriness that makes these 100% moreish! You’d be forgiven for thinking you were cheating with these.

The best part? There are no added flours – just sweet potato mash and eggs, and the spices/seasoning of your choice. 

What you need

Yield: 6-7 pancakes

1 cup sweet potato, steamed and mashed

2 large eggs


1/2 tspn chai masala (this is a combination of ground cinnamon, cardamom, and all spice)

2-3 drops vanilla extract

What you need to do

1. Mash the steamed potato. 

2. Add chai masala (or separate spices of your choice, if using) and vanilla. 

3. Add eggs and whisk thoroughly. 

(If it’s too liquid, add a tablespoon more sweet potato at a time until you reach a thicker consistency). 

6. Get your scoop ready, pan on, and ghee ready to go.

7. Add ghee to the pan, scoop some batter, and fry.

8. Flip over once, cook for a bit, and done!

Serve with whatever you like : bacon, or strawberries, or any topping you fancy!
