Egg wraps [Paleo, Gluten free, Grain free, Dairy free]

We’ve got the cauli wraps down, and as great as they are, well, they do take some time to put together with the steaming, squeezing, burning-your- fingers-in-the-process thing!

Enter the egg wrap! So easy, super quick, and it holds together beautifully.

Recipe for Paleo Egg Wraps

What you need

For 1 wrap

2 eggs

1 tspn tapioca flour

1 tspn nutritional yeast flakes (optional)

Salt and pepper to taste

What you need to do

1. Whisk the ingredients together (use a fork/hand whisk). Make sure there are no lumps!

2. Heat pan, and add a touch of oil. Add mixture and swirl around to cover the entire surface of your pan.

3. Allow to cook for about 30 seconds or so, then flip it over (this will be easy to do with a spatula).

4. Another 20 seconds – or until cooked – and remove from pan.

5. You can now fill with whatever you choose, and wrap it up!

I made an onion and tomato chutney, threw on some salad, and sliced half an avo for my ‘breakfast burrito’.

I modified this slightly by just adding chopped chard to the pan, fried it a bit, and then added the egg mixture.

So there you have it – the easiest wrap ever.

Enjoy !

    • Hi! It won’t be as flexible and easy to handle – the tapioca acts as a binding agent and makes the wrap very easy to handle. The other flours may make it more ‘brittle’. You can try but I can’t guarantee that it will be the same wrap 🙂

  1. OMW this just changed my life. Been watching you on Facebook and your things always look so tasty. Your recipes are so easy and with basic ingredients. I tried the wraps without the yeast and they turned out really well and I decided to pop some coriander in the raw egg. Wanted to fill them with Mexican flavours. So tasty….

    • Awesome! And they’re so simple … 😉 I don’t use the nutritional yeast most of the time. I also use any herbs I have available – and chilli ! It’s super versatile. Thanks for the feedback!! ❤
