Energy boosting ‘Banana Choc Surprise’ Muffins

There were 3 bananas that were starting to look a bit sad so when I was asked for a ‘treat’, I thought banana bread would be the way to go. As with most things that I cook though, I just add things to a bowl haphazardly and hope for the best. I didn’t look at any recipes or even know that any ‘choc’ would be a part of this when I started. I’ve been absolutely out of it with a very persistent cold and I feel like I’m in a daze – so imagine a vignette around me, it’s hazy… And just ingredients finding their way into a bowl. Yep, that’s how this came about! 

 
I’m really not a fan of bananas – I don’t eat them or use them all that often. In fact, I went through great lengths trying to make pancakes without bananas! But I hate wasting food and I really needed to use up those bananas. Now I had to figure out the rest of the ingredients. Flour? Nut butter? Hmmm… Then I thought about the banana and egg pancakes again and decided to go with the  flour free option, but to use nut butter because I needed an energy boost! 

Recipe for Paleo Banana Choc Surprise Flour Free Muffins

Yield: 8 muffins 

Prep time: 10 – 15 minutes  

Cooking time: 15 minutes

 
What you need 

3 bananas (ripe)

2 eggs 

1/4 cup cashew nut butter (or almond or macadamia)

2 tblspn date paste 

1 tspn baking powder (or combination of cream of tartar and bicarb)

1/4 cup unsweetened cocoa powder 

Few drops vanilla essence 

What you need to do

1. Preheat the oven to 180°C. Line a muffin tray with cases. Mash the bananas in a mixing bowl. 

 

2. Add date paste, mix well. Add nut butter. Mix.

  
3. Whisk eggs in a separate bowl. Add to banana mix with baking powder. Combine thoroughly. 

  
4. (At this point, add the vanilla and you’re done – you’ve got yourself some banana muffins. You can add chopped nuts too.) This is when I decided to add cocoa. On a whim. It happens. A lot! 

 

5. Scoop mix into muffin cases. Bake for approximately 15 minutes, or until cooked through. 

 
6. Remove from oven, allow to cool.   

Done! 

FYI: Another incredible alternative are my Cashew Pumpkin muffins – for those who aren’t too keen on bananas 😉 
You can serve as is – they’ve got pretty much everything you need for a good ol’ fashioned ‘treat’ snack, or you can add fruit, nuts, coconut cream… It’s up to you and your taste. If not Paleo, or you allow dairy and sweetners, add whipped full cream, and maybe even some honey. 

You can get the kids excited about it with some coconut cream and sprinkles – life’s all about balance and a few sprinkles are fine by me ! 

   

Well there you have it: a 2-in-1 recipe that will give you either a flourless  banana bread or something chocolatey.
