Dairy-free, Paleo friendly Strawberry Parfait

You want yoghurt but you can’t have dairy? No problem! This is just the ticket: Dairy free, Paleo Strawberry Parfait

This is a micro-recipe because I don’t have pics of each stage – it’s quick, it’s simple, and it’s absolutely perfect as a yoghurt replacement for breakfast, or even puddings! 

It’s a dream match for my Paleo Granola or CinnamoNutty Muesli 😉 

What you need

1/2 cup chilled coconut cream

Few drops vanilla extract

1/2 tspn freshly squeezed lemon juice

2-3 mashed strawberries (about 3 heaped tablespoons)

What you need to do

1. Whip up the coconut cream (ensure it’s been chilled in the fridge overnight) until it almost doubles in volume.

2. Add vanilla, lemon juice, and strawberries (mashed up). 

3. Whisk together to form a glorious parfait! You can also blend it all together. 

You can use any fruit you choose – you can’t taste the coconut so it’s a great accompaniment because it blends in with other flavours. 

Here’s how I served mine: with granola clusters. The perfect breakfast on the go!
