Paleo Cocoa-Nutty Pancakes [Grain free, Gluten free, Dairy free]

These are AMAZING!! Made from a mixture of ground cashews, pecans and sunflower seeds, with raw cacao powder too … Paleo is pretty pleasing!

  
I love pancakes. I love nuts. I love chocolate. Now, add all those together and we get ‘Cocoa-nutty pancakes’! This was an experiment and I’m glad to say it worked out. Only problem though is that I really wanted more – even though I had 1 and 1/2 pancakes and was completely stuffed. This recipe does need a warning – the nut content is high, so this is most definitely not one you can make all the time. It’s an indulgence for sure! 

What you need

1/2 cup ground pecans, cashews, and sunflower seeds 

1.5 tspns raw cacao powder

1/2 tspn bicarb 

1 egg

1/4 cup coconut milk

A few drops of vanilla extract 

Pinch of salt 

Optional sweetner: you can either add 1 tblspn date paste or 1 tspn raw honey if you want added sweetness. These aren’t exactly naturally sweet unless you add fruit to serve. 

What you need to do

1. Blend the nuts and seeds together to make a flour.   

2. Add the rest of the dry ingredients, egg, and vanilla. Mix.  

 
3. Stir in the coconut milk to form a batter.  

 
4. Using an ice-cream scoop for uniformity of size, scoop some batter, and fry in ghee/butter/coconut oil (your choice).  

   
5. Flip over, fry the other side. 

  
6. Done! 

  
It’s crunchy and nutty and yum! Serve with a topping of yor choosing – I used strawberries and more coconut milk. You could whip up some coconut cream for extra decadence. A drizzle of honey/maple syrup makes this a divine paleo treat (but for REBOOT, just leave this out!).
