Paleo Cole Slaw [Dairy free]

Forget the fast food version… here’s a simple recipe for my ‘Clean Slaw’!

Super quick. Super simple. Super yum! 

I used to eat loads of cole slaw with just about everything but then for some reason thought I couldn’t anymore when Rebooting and ‘going Paleo’ – crazy, I know. So here it is: a clean slaw πŸ˜‰ 

Serve with Cottage Pie or Quiche, or whatever you fancy really! 

Recipe for Paleo Cole Slaw [Dairy free]

Yield: 4 good sized servings

Prep time: 15 minutes

What you need 

1/2 small head of green cabbage

1/2 small head of purple cabbage 

2-3 carrots, grated 

3 tblspns apple cider vinegar

1/2 cup mayo

Salt and pepper to taste

*Optional: for some crunch, add flaked almonds. If you like raisins in your cole slaw, substitute them with chopped dates for some sweetness. You could also add grated apple*

What you need to do

1. Shred both the green and purple (or is it red?!) cabbage – either with the grater attachment of your food processor or you can slice it finely with a knife. 

2. Grate the carrots, mix into the cabbage. Add vinegar, mayo, and seasoning. Mix well. 

Done! You can either serve immediately or cover with cling wrap and refridgerate for an hour or two to allow the flavours to develop.
