Chicken and Apple Meatballs/Burgers [Gluten free, Grain free, Paleo]

This was one of my daughter’s favourites as a toddler. I’d almost forgotten about them entirely but had some apples that needed using up, and inspiration struck. These are really delicious – the apple keeps the chicken moist and also adds a slight sweetness that pleases fussy toddlers (and adults alike!).

I made a batch of meatballs for the kids, and made burgers for the grown ups. Yuuuuuuum!!!

Recipe for Chicken and Apple Meatballs/Burgers

Yield: 24 meatballs (or 12 meatballs, and 3 burger patties)

Prep time: 10 minutes

Cooking time: 20- 25minutes

What you need

6 chicken breasts, minced

2 small apples, grated

1 tspn ginger & garlic paste

1/2 tspn mustard powder

1 tspn dried origanum (or mixed herbs)

1 egg, lightly whisked

Salt and pepper to taste

What you need to do

*I use a food processor which makes things a lot easier, but you can do it without one!*

1. Mince the chicken breast, and grate the apples.


2. Add the rest of the ingredients to your bowl (except the egg), give it all a good mix.


3. Mix in the whisked egg.  The mixture is very wet and sticky. Don’t worry, whilst cooking, it does hold its shape!


4. Add some oil to a frying pan, over medium heat, and scoop out small amounts of the mix, and fry all sides, until cooked.


*If making burgers, form into patties, and fry as above!*


Done!

They’re great as snacks, for lunch boxes, or as part of a meal.
