Super quick and simple to do, these pancakes are delicious, nutritious and a hit with the kids!
If you want a banana-free version, I made these nut butter pancakes some time ago because I am not the biggest fan of mushy cooked bananas and wanted an alternative. They contain some flour and are absolutely scrumptious too!!
If you’re happy with banana and want a flourless recipe, here it is! Just be warned though – these pancakes are VERY delicate and break easily. I had a few tears here and there but rolled up, nobody could tell 😉
Recipe for Flourless Banana Nut Butter Pancakes
Yield: 2 large pancakes/crepes
Prep time: 2 minutes
Cooking time: 3 minutes
What you need
1 ripe banana
2 tspns nut butter (the choice is yours)
1/4 tspn baking powder
Few drops vanilla extract
Pinch of salt
What you need to do
1. Mash the banana in a bowl (I use a measuring jug as it’s easier to pour the batter for cooking). Add all remaining ingredients into the bowl, mix well.
2. Heat oil/butter in a pan. Pour in half the mixture, and flip once cooked on one side (this is where it gets rrrrrreeeeeeeallly tricky and can break if you’re not careful!).
3. It shouldn’t take longer than about 10 seconds for the second side to cook. Repeat the process for the remaining mixture and then you’re done!
Serve as you would any pancakes with sides/toppings of your choice.
