Paleo Cacao Chia Pudding [Gluten free, Grain free, Dairy free]

There are moments when the only answer is chocolate. Enter – a dairy free, paleo pudding that hits just the right spot!

Today was just one of those days and time seemed to disappear into an abyss. When the time to get dinner ready drew near, I had to think ‘quick and easy’ and, of course, DELICIOUS! With the main out the way, I really felt like making a dessert. Luckily, I had some chia seeds soaking in the fridge (hello meal prep!) so whipping up a pudding wasn’t much of an effort. 

This is a fantastically-chocolatey-scrumptious dish! It looks something amazing, tastes ‘much better than chocolate mousse’ – and that’s out the mouth of a 7 year old who isn’t prone to eating anything that she doesn’t think is delicious!! I think I’ve just found my dinner party go-to dessert πŸ˜‰

Cacao Chia Pudding

You can add flavours too – how about unleashing the beast with a chocolate-chilli combo, or what about throwing in some rosemary, or cherries… Mmmmmm!!!! 

Recipe for Cacao Chia Pudding

Yield: 4 servings 

Soaking time: 3-5 hours (or overnight)

Prep time: 5-10 minutes 

What you need 

1/3 cup + 2 tblspns chia seeds (soaked)

1.5 cups unsweetened almond milk, or coconut milk (for soaking the chia seeds)

2 tblspns raw cacao powder (or unsweetened cocoa powder) 

1/2 tspn vanilla extract

4-6 dates (you can use 2 tblspns raw honey or maple syrup instead to sweeten) 

Pinch of salt 

Options: choose your flavour – add cayenne pepper; rosemary; cherries; basil; orange… This part is up to you! 

What you need to do

1. Soak the chia seeds in the milk of your choice, either for 3-5 hours or overnight. 

If you’re planning this in advance, you can add the cacao powder and salt and mix together, then stick it in the fridge to soak. If not, just add these with the rest of the ingredients before blending and serving.

2. The chia and milk will have thickened up to ‘pudding consistency’. Add everything into a blender, and blend! 

4. DONE!  

Top with fresh fruit, whipped coconut cream… Whatever you fancy πŸ˜‰
