Paleo Chia-Mac Ice Cream [Dairy free]

Ice cream. Paleo. Clean eating. That’s about all I need to say! It’s dairy free and delicious!!

It’s hot and it’s the holidays. Needing not just the temperature but tempers to cool down too! I’ve seen many of these ‘Paleo ice cream’ recipes so thought I’d make some and add my own flava 😉 

 

Now, I swear I’m not only eating pseudo-junk. Really!! The last few posts probably tell a different story though but it’s all part of the experimentation!

This is absolutely perfect for a hot summer’s day or anytime really, I mean, it’s ice cream! By slicing and freezing the bananas that are ‘on the edge’, I always seem to have a couple in the freezer. The only real advance prep is the soaking of the chia and the frozen banana – other than that, it’s all about blending. 

Recipe for Dairy free, Paleo Chia-Mac Ice Cream

Yield: 4 servings 

Prep time: 5 minutes (plus overnight freezing of the bananas and soaking of chia seeds)

What you need

2 large bananas, sliced and frozen 

1 heaped tblspn soaked chia seeds 

1/4 cup macadamia nut butter

1/4 cup coconut cream 

1/4 tspn vanilla powder/extract 

Pinch of salt 

What you need to do

1. Throw everything into your blender and blend until smooth! 

  
That’s it. Simple, quick and easy, and you’re left with a smooth and creamy ice cream. Just eat it straight after making it because it melts easily! Or, stick it back in the freezer and blend again just before eating. Enjoy!
