This is a clean cheat for those moments when some chocolate is needed. Yes, needed! Quick to whip up too so you won’t have to wait to get your fix with these paleo cacao pancakes
BE WARNED: THIS IS DECADENT!!
Before I start, I have to say that the two components that take some prep are the date paste and having the can of coconut cream in the fridge overnight to firm up enough to whip/dollop on top. You don’t need to do that of course, but aesthetically, it just looks so much better.
The rest of it is really quick and simple. This is a mish-mash of recipes, such as the nut butter pancakes, the carob choc pancakes, and choco-nutty pancakes. The batter for this though is thicker, and of course, the addition of the chocolate sauce just takes it up a notch.
Being pseudo-junk, this is certainly not an everyday thing but once in a while is just fine. ‘Going Paleo’ needn’t mean you can’t indulge in these treats sometimes … I’m sure there was a cave woman somewhere out there who had chocolate needs too !! It’s all about adaptation and with raw cacao available to us, well, let’s use it to our advantage – sometimes..!
Recipe for Paleo Cacao Pancakes with Chocolate Sauce
Yield: 4 pancakes
Prep time: 3-5 minutes
Cooking time: 5 minutes
What you need
For the pancakes
1/3 cup almond flour
1 tblspn tapioca flour
1 tblspn raw cacao powder
2 tblspns macadamia nut butter
1 tblspn date paste
1 tspn baking powder
2 X-large eggs
Pinch of salt
For the chocolate sauce
1 tspn raw cacao powder
2 tblspns date paste
What you need to do
1. Mix the dry ingredients for the pancake batter together in a bowl. Add eggs and combine well.
2. Place a pan over medium heat. Add a little oil. Use an ice cream scoop to scoop even amounts of batter to create similar sized pancakes. Cook evenly on both sides, until lightly browned. Done!
3. As pancakes cool slightly, make up the chocolate sauce. Simply mix the cacao powder and date paste together until smooth. That’s it!
Serve as desired, with a dollop of coconut cream and strawberries as I have done, or any way you choose. Sit back, and enjoy! 😉
