Strawberry Chia Pudding [Paleo, Gluten free, Grain free, Dairy free, No Added Sugar, REBOOT]

I love chia pudding. It is delicious and nutritious and guilt free! Adding the sweet and tangy paleo strawberry sauce makes it even better!

This is a short post – because this needs little introduction. πŸ˜‰ 

When I soaked some chia seeds earlier, I thought it’d be for my usual breakfast chia porridge, and it still is but then I also felt like something a bit more… 

So with some overripe strawberries in the fridge, I made some Paleo strawberry sauce and this is where the idea sparked for a pudding. Without further ado, let’s get straight to the recipe! 

Recipe for Paleo Strawberry Chia Pudding

Prep time: 2 minutes (if chia is soaked and sauce is ready! Otherwise, a few hours for soaking the chia seeds) 

Yield: two servings 

What you need 

1/3 cup chia seeds (soaked in water/coconut milk) 

3 tbsp macadamia meal (or crushed almonds) 

1 tbsp dessicated coconut 

3 tbsp seed mix (sunflower, flax, sesame, pumpkin) 

1/4 cup strawberry sauce

Topping

Sprinkle of coconut flakes 

Drizzle of coconut milk 

What you need to do 

1. To soak your chia seeds, add 1/3 cup of dry seeds to approx 1/2 – 2/3 cup of water. This makes a thick mixture once soaked. Refrigerate for a few hours or overnight. 

2. Scoop out the required amount and start layering into individual servings ! Chia mix, then macadamia meal, coconut, seed mix, strawberry sauce, and finally top with flaked coconut and a drizzle of coconut milk. Done! 

Quick, simple, easy, and delicious!
