This is perfect as a quick brekkie bread to mop up yolks and sauces, or even just on its own in lunchboxes. You can flavour it however you wish or keep it simple and vanilla instead 🙂
Am keeping this one short and sweet because I know many of y’all have been waiting for this recipe!
In order to make these, you need a donut pan (for my South African readers, you can get one at Clicks for R55). That’s the only piece of ‘special’ equipment necessary so no investing in machines 😉 When I bought my pan, I hadn’t a clue what I was going to do with it (well, a donut of some sort but the ‘how’ was another story!). Then came the school holidays and with two fussy mouths to feed, it felt like the perfect time to experiment and see what we could come up with.
With the kids watching my every move, I threw some ingredients together and got to work. They were so quick and easy to make, I had just about put the ‘donuts’ in the oven and it was time to take them out again. The batter is simple and doesn’t require much thought – which is perfect when you just want to get something made and be in and out the kitchen as quickly as possible.
Recipe for Paleo Donut Bread
Yield: 6 donuts
Prep time: 2 minutes
Baking time: 6 minutes
What you need
1 heaped tbsp coconut flour
1 heaped tbsp tapioca flour
1.5 tsp baking powder
2 x-large eggs
2 tbsp date paste*
Pinch of salt
*Optional: add flavours – cacao, lemon, chilli and/or garlic for savory ones..
What you need to do
1. Preheat oven to 190°C. Grease a donut pan.
2. Add dry ingredients to a bowl, and then whisk in the eggs and mix until a smooth batter is formed.
3. Pour into the donut pan moulds, and bake for 6 minutes.
4. Remove from oven, allow to cool slightly, and remove donuts from baking pan. Done !
